A new year means new diets, weight loss programs and workout regimens for many college students. Trying a new diet is always daunting and may even seem too complicated at times. It can be hard to know where to start or what to make.
However, I am here to help with a simple, easy and flexible recipe that anyone can try for “Veganuary” – a month where those interested in going vegan can try it out for 30 days. If that sounds like you, read on.
Vegan Overnight Oats
Overnight oats are perfect for those in a hurry. You can add almost any toppings you want, and it can be fixed even days in advance. All you need is oatmeal and your favorite milk substitute! To make overnight oats, mix your milk substitute in a container with oatmeal and let it sit overnight to soften. The amount of liquid will vary based on personal preference. Below I will share my personal favorite vegan overnight oats, but you can add whatever you want.
-¼ cup oatmeal
-½ cup oat milk
-2 tbsp. brown sugar oat creamer *Not all brown sugar is vegan, so please check the label*
-crushed almonds (desired amount)
-blueberries (desired amount)
-dried cranberries (desired amount)
