Simple Student Meals: Egg Omelet in a Mug

What better way to start your day than with a quick and easy breakfast? With the semester in full swing, many students find themselves rushing out the door, not having enough time to eat breakfast. A good breakfast will give you energy throughout the day, keep you full, and give you nutrients your body needs after a good night’s sleep.

Only one problem, making something good for breakfast often takes too much time and takes too long to clean up. This egg omelet in a mug can solve this problem and will leave you happy and alert, while only having to wash the mug and fork you use! 

Ingredients

• 2 eggs

• Favorite shredded cheese

• Diced veggies like tomatoes, peppers, onions, or potatoes

• Any kind of pre-cooked meat, diced

• Salt and pepper to taste

Instructions Checklist

• Step 1

Spray the inside of the mug with cooking spray, then crack eggs into it and mix the yolks together.

• Step 2

Add in your preferred amount of cheese, veggies, or pre-cooked meat and stir until everything is covered with egg.

• Step 3

Microwave on high for one minute, remove and stir, and microwave again for another minute and a half.

• Step 4

Remove the mug from the microwave and stir, then add salt and pepper to taste.
