Tasty Tips with Tay: A twist on a favorite comfort food

We’re back with another installment of “TikTok to Table.” A few weeks ago, a friend sent me a TikTok by user @chaniwhirly that details how to make a funky comfy food, kimchi grilled cheese.

For those of you who may not know what kimchi is, I grew up with it. Kimchi is a historically Korean side dish made up of salted and fermented vegetables like cabbage, Korean radish, and a wide variety of savory, spicy seasonings. I’m not great at making it, so I buy mine from the Asian markets around town. It’s cheaper to buy it from these stores rather than your typical supermarket.

In the video, @chaniwhirly talks to the audience about how she was recently broken up with so, she wants to show how to make her favorite comfort food. The ingredients are simple, funky and delicious.

This recipe is SO easy. If you can make a grilled cheese sandwich, you can make this. 

I hope that you’ll give this American/Asian fusion food a try.

Ingredients

  • 1 Tbs butter for the pan (use butter, not cooking spray for this)
  • 1 Tbs Gochujang mayo (or any spicy mayo). You can make this mayo by combining Gochujang paste and mayo or even Sriracha and mayo. 
  • 2 slices of your favorite bread (I like sourdough)
  • 2 slices of your favorite cheese (I like this one with cheddar, gouda, and mozzarella cheese)
  • Korean pear (you can usually find these at any grocery store)
  • Kimchi (you’ll need to add a thin layer of kimchi to the inside of the sandwich. Measure with your heart

Directions

  1. Butter one side of one slide of your bread, repeat with the other slice, and set aside.
  2. Using a medium-sized pan, set to medium heat and place 1 Tbs of butter in the pan.
  3. Once melted, you’re ready for bread.
  4. Lay one slice of bread, buttered side down, in the pan.
  5. Using a spoon, spread ½ Tbs Gochujang mayo on the bread in the pan.
  6. Layer one slice of cheese, then pieces of sliced pear, then a single layer of kimchi, then the second slice of cheese.
  7. Using a spoon, spread ½ Tbs Gochujang mayo on the non-buttered side of your second slice of bread.
  8. Place the second slice of bread, mayo side down, on top of the cheese, buttered side up. 
  9. Press the sandwich down with a spatula and cook until both outsides of the bread are golden, not burnt. 
  10. Add butter to the pan as necessary if it gets dry.
  11. When the bread is golden on each side, remove it from the pan and serve. Eat while hot!
